Samosa Chaat




samosa served with chilled yogurt, to make a tempting snack.

Ingredients

• Samosas 4 large
• Yogurt,Whisked and chilled 1 cup
• Sweet tamarind chutney 1/2 cup
• Green chutney 1/2 cup
• Cumin powder,roasted 1 teaspoon
• Red chilli powder 1 teaspoon
• Puris,crushed paani puri 8
• Fresh coriander leaves,chopped 2 tablespoon

Method

Heat a tawa. Flatten the samosas slightly and place them on the tawa and heat over medium heat. When the samosas are heated through and slightly crisp on both sides, place them in individual plates. Pour the chilled yogurt over the samosas and top with the sweet tamarind chutney, green chutney, roasted cumin powder, red chilli powder, crushed paani puris and coriander leaves. Serve immediately.

Papdi Chaat




A quick snack made using papadi.

Ingredients


• Crisp puris (papdi) 20
• Potatoes,thinly sliced , boiled 2 medium
• Onion ,finely chopped 1 large
• Green chutney 2 tablespoons
• Tamarind chutney 2 tablespoons
• Lemon juice 1/2 tablespoon
• Roasted cumin powder 1 teaspoon
• Rock salt (sendha namak) 1/2 teaspoon
• Sev 4 tablespoons
• Boondi 1 tablespoon
• Pomegranate pearls 2 tablespoons
• Fresh coriander leaves,finely chopped 1 tablespoon

Method


Arrange the papdi on a serving dish. Spread potatoes on it neatly, now spread onions on top. Add a dash of tamarind and green chutney on each papdi. Sprinkle lemon juice, roasted cumin powder and rock salt. Top up with sev, boondi, pomegranate pearls and coriander leaves and serve immediately.

Aloo Tikki Chaat




Urad dal stuffed potato pattice, pan-fried and served with yogurt and chutney.

Ingredients

FOR PATTICE 

• Potatoes 4 large
• Salt to taste
• Oil to shallow fry
• FOR FILLING
• Split black gram skinless (dhuli urad dal),soaked and boiled 1 cup
• Fresh coriander leaves,chopped 1 tablespoon
• Green chillies,chopped 2
• Black salt (kala namak) to taste
• Asafoetida a pinch
• Ginger,chopped 1/2 inch piece
• Chaat masala 1/2 teaspoon
• Red chilli powder 1/2 teaspoon

FOR TOPPING (one portion)
• Matara 1/2 cup
• Yogurt 1/4 cup
• Sweet date and tamarind chutney 2 tablespoons
• Green chutney 1/2 tablespoon
• Roasted cumin powder 1/4 teaspoon
• Black salt (kala namak) a pinch
• Chaat masala 1/4 teaspoon
• Red chilli powder 1/4 teaspoon
• Papdis,crushed a few

Method

For the stuffing take urad dal in a bowl. Add green chillies, ginger, red chilli powder, salt, coriander leaves and mix well. Add salt to mashed potatoes and mix. Divide into eight equal portions. Heat a tawa. Take a portion of mashed potatoes in your palm, spread slightly, place a portion of the dal mixture in the centre and gather the edges and shape into a tikki. Shallow fry the tikkis on medium heat with a little oil till both sides are evenly golden brown. If the potato covering breaks up, add a little cornflour and mix. To serve place a tikki on a place. Pour some chilled yogurt, green chutney, sweet tamarind chutney over it. Sprinkle roasted cumin powder, chaat masala, red chilli powder and coriander leaves. Crush a few papdis and put on the top and serve immediately.

A refreshing snack made with boiled potato and sweet potato.

Ingredients

• Potato,boiled, 1 inch cubes 2 large
• Sweet potato,boiled, 1 inch cubes 1 large
• Lemon juice 1 1/2 tablespoon
• Salt to taste
• Ginger, cut into 1/2 cm wide long stripes 1 inch piece
• Banana 1 large
• Green olives,sliced 2-3
• Black olives,sliced 2-3
• Tamarind pulp 2 tablespoon
• Green chilli,finely chopped 2
• Chaat masala 1 teaspoon
• Fresh coriander leaves,chopped 2 tablespoon

Method

Add half a teaspoon of lemon juice and a pinch of salt to ginger strips. Keep in the refrigerator. Peel and cut banana into one inch pieces, apply half a teaspoon of lemon juice and set aside. Place potatoes, sweet potato, banana, green olives and black olives in a mixing bowl. Add remaining lemon juice, tamarind pulp, green chillies, chaat masala, salt, coriander leaves and toss lightly. Serve garnished with pickled ginger strips.

Ingredients

• Potatoes,boiled and cut into small cubes 2 medium
• Jam (fruit),cut into cubes 8-10
• Red chilli powder 1 teaspoon
• Roasted cumin powder 1/4 teaspoon
• Amchur powder 1 teaspoon
• Black salt (kala namak) 1/4 teaspoon
• Chaat masala 1/2 teaspoon
• Salt to taste
• Juice of 1 lemon
• Fresh mint leaves a few for garnishing
• Pomegranate pearls a few for garnishing

Method

Mix together potatoes, jam, red chilli powder, roasted cumin powder, amchur, black salt, chaat masala, salt, lemon juice in a bowl.

Transfer into drones, garnish with mint leaves and pomegranate pearls and serve.

Crisp fried potatoes tossed with spicy masala

Ingredients

• Potatoes,cubed 1/2 inch 3 large
• Lemon juice 3 teaspoons
• Salt to taste
• Ginger,cut into thin strips 1 inch piece
• Oil to deep fry
• Onion ,chopped 1 large
• Chaat masala 1/2 teaspoon
• Red chilli powder 1/2 teaspoon
• Cumin powder 1/4 teaspoon
• Green chillies,chopped 2
• Fresh coriander leaves,chopped 3 tablespoons

Method

Add one teaspoon lemon juice and a pinch of salt to the ginger strips and keep in the refrigerator till use. Heat sufficient oil in a kadai till medium hot. Add potato pieces and deep fry till crisp and golden. Drain and place on an absorbent paper. Transfer the potatoes into a big bowl. Add onions, salt, chaat masala, red chilli powder, cumin powder, green chilies, coriander leaves and the remaining lemon juice and mix well. To serve transfer the mixture into a serving bowl, garnish with ginger strips and serve immediately.

• Peanuts,roasted 1/2 cup
• Fresh coriander leaves,chopped 2 tablespoons
• Fresh mint leaves,chopped 1 tablespoon
• Chaat masala 2 teaspoons
• Salt to taste
• Sev 1/2 cup
• Lemon juice 1 teaspoon
• Green chutney,optional 2 tablespoons

Method

In a large bowl combine potatoes, pomegranate pearls, onion, green chillies, peanuts, coriander leaves, mint leaves, chaat masala and salt and toss well Add sev, lemon juice and green chutney (if using) and toss the mixture again. Transfer the mixture into individual bowls and serve immediately.
